We’re ready to dip in and celebrate National Soup Month! It’s chilly and damp outside, and we’re game for some comfort food.
In typical Country Life fashion, we unscientifically polled the folks at home and co-workers via email, and found out that just about everyone wants chicken broth or chicken soup on a sick day. Nic, from our retail store said: “Chicken Noodle is a Jewish antibiotic foranything that ails you.”
That said, though, everyone has a different everyday favorite. Around the holiday table, opinions varied: potato cheese soup, beef barley, chili. At the office, answers were even more varied! We’ll cover recipes for all kinds of soups this month. Let us know if you have any special requests!
Homemade goodness when time is tight.
Lehman’s Favorites
Shonda on the marketing team loves this soup from the Pioneer Woman: “Chicken noodle soup with a twist – parsnips. I also like to add a little lemon juice to mine (although it’s not in the recipe).” Other folks have tasty sounding favorites too:
Sarah, marketing team: Potato soup
Bruce, merchant team: Chili or smoked sausage and bean”
Donna, executive team: Beef vegetable
Glenda, marketing team: Cheeseburger soup (grilled cheese and tomato soup too!)
Peter, accounting; and Karen, marketing: Beef barley

Just 2 teaspoons of any of our soup bases, in one cup of hot water gives you a rich, satisfying broth. Stir well to dissolve the soup base.
Add your favorite cooked veggies to taste, and you’re done. It’s super office lunch, light supper or snack. (Of course you can always add noodles, like our Homemade 100% Whole Wheat Noodles if gluten’s not an issue for you.)
